VEGETARIAN PASTA WITH TOMATO SAUCE


Ingredients:

  • ⅔ lbs chopped fresh basil
  • 2 ⅔ lbs tomatoes
  • 2 ⅔ lbs button mushrooms
  • 1 ⅓ lbs carrots
  • 1 ⅓ lbs green pepper
  • 1 package (about a pound) veggie ham
  • Pasta
  • Olive oil

Seasonings:

  • 1 to 2 tablespoons oregano
  • 1 can tomato sauce
  • Shredded mozzarella

Directions:

  • Dice vegetables and veggie ham into fine pieces. The carrots can be grated.
  • Heat olive oil in a large pot. Sauté basil until fragrant. Add tomatoes and cook until soft.
  • Add mushrooms, carrots, green pepper, veggie ham and tomato sauce. Lower heat and simmer for approximately two hours.
  • Cook pasta according to package directions or until al dente. Drain well and keep warm.
  • Add mozzarella and oregano to sauce during the last minute of cooking and stir well.
  • Pour sauce over the noodles and serve.
