VEGETARIAN PASTA WITH TOMATO SAUCE
Ingredients:
- ⅔ lbs chopped fresh basil
- 2 ⅔ lbs tomatoes
- 2 ⅔ lbs button mushrooms
- 1 ⅓ lbs carrots
- 1 ⅓ lbs green pepper
- 1 package (about a pound) veggie ham
- Pasta
- Olive oil
Seasonings:
- 1 to 2 tablespoons oregano
- 1 can tomato sauce
- Shredded mozzarella
Directions:
- Dice vegetables and veggie ham into fine pieces. The carrots can be grated.
- Heat olive oil in a large pot. Sauté basil until fragrant. Add tomatoes and cook until soft.
- Add mushrooms, carrots, green pepper, veggie ham and tomato sauce. Lower heat and simmer for approximately two hours.
- Cook pasta according to package directions or until al dente. Drain well and keep warm.
- Add mozzarella and oregano to sauce during the last minute of cooking and stir well.
- Pour sauce over the noodles and serve.
