CRISPY FRIED MUSHROOMS
Ingredients:
- 1 ⅓ lbs button mushrooms
- 2:1 ratio cornstarch and potato starch
- Oil for deep frying
- 1 tablespoon butter or margarine
Seasonings:
- ½ teaspoon black pepper
- Salt
- Sugar
Directions:
- Wash the mushrooms and blanch. Drain well.
- Mix the cornstarch and potato starch with some water into a paste. Make enough to coat all the mushrooms.
- Deep fry the mushrooms in hot oil until crispy (about one to two minutes). Soak up the excess oil with paper towels.
- Melt butter or margarine in a pan and add salt, pepper, and sugar to taste.
- Toss with mushrooms to coat. Serve immediately.
