CRISPY FRIED MUSHROOMS


Ingredients:

  • 1 ⅓ lbs button mushrooms
  • 2:1 ratio cornstarch and potato starch
  • Oil for deep frying
  • 1 tablespoon butter or margarine

Seasonings:

  • ½ teaspoon black pepper
  • Salt
  • Sugar

Directions:

  • Wash the mushrooms and blanch. Drain well.
  • Mix the cornstarch and potato starch with some water into a paste. Make enough to coat all the mushrooms.
  • Deep fry the mushrooms in hot oil until crispy (about one to two minutes). Soak up the excess oil with paper towels.
  • Melt butter or margarine in a pan and add salt, pepper, and sugar to taste.
  • Toss with mushrooms to coat. Serve immediately.
