MINI APPLE PIE
Ingredients:
- 4 medium sized apples
- Juice of ½ a lemon
- 1 ½ tablespoons butter
- 2 tablespoons sugar
- 2 tablespoons cornstarch
- ½ teaspoon cinnamon
- 12 small sheets puff pastry (homemade or packaged)
Directions:
- Preheat oven to 180°C (350°F).
- Peel and core the apples, then dice into small pieces. Lightly fry in a sauté pan over low heat, and add the sugar.
- Add the butter when apples are soft. Cook for a minute or two. Add the lemon juice, cinnamon, and cornstarch. Remove from heat and mix well.
- Fill the pastry sheets with apple filling. Seal the edges tightly and press with fork if desired.
- Pierce the top of the pastries with a fork or knife to vent.
- Bake for 10-15 minutes until puffy and golden brown.
