MINI APPLE PIE


Ingredients:

  • 4 medium sized apples
  • Juice of ½ a lemon
  • 1 ½ tablespoons butter
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • ½ teaspoon cinnamon
  • 12 small sheets puff pastry (homemade or packaged)

Directions:

  • Preheat oven to 180°C (350°F).
  • Peel and core the apples, then dice into small pieces. Lightly fry in a sauté pan over low heat, and add the sugar.
  • Add the butter when apples are soft. Cook for a minute or two. Add the lemon juice, cinnamon, and cornstarch. Remove from heat and mix well.
  • Fill the pastry sheets with apple filling. Seal the edges tightly and press with fork if desired.
  • Pierce the top of the pastries with a fork or knife to vent.
  • Bake for 10-15 minutes until puffy and golden brown.
